What I made for dinner tonight: Stir-Fry

An oldie but goodie, with an nearly infinite variation of ingredients. Tonight, the ingredient list included:

  • cubed, firm tofu
  • 6 small (plum sized) bok choy, chopped
  • 1 stalk celery, chopped
  • 1 red bell pepper, chopped
  • 1 large leek, white part, chopped
  • 1 cup chopped carrots
  • 2 minced cloves garlic
  • 1 tsp grated ginger
  • 2 tablespoons of hoisin sauce
  • 2 tablespoons rice wine vinegar
  • 3 tablespoons of sesame oil
  • 1 lb precooked soba noodles, frozen
  • soy sauce to taste
  1. Heat up soba noodles in microwave
  2. add sesame oil, hoisin sauce,and rice wine vinegar to pan – heat to sizzle
  3. add garlic and ginger – saute
  4. add tofu – coat in sauce
  5. add carrots – saute
  6. add celery – saute until softish
  7. add red pepper – saute until slightly crunchy
  8. add bok choy – warm
  9. chop soba noodles and mix
  10. eat!
